Baked potatoes are one of those dishes that never go out of style. They’re hearty, budget-friendly and versatile enough to serve with almost anything. From steak dinners to weeknight chicken, they’re often the best side dish on the table. They also make a great stand-alone meal, especially when loaded up with toppings.
But as simple as baked potatoes sound, they can be tricky to get right. Sometimes the skin doesn’t crisp up, the insides bake up gummy, or the potatoes stick to the pan. That’s why this crispy, cheesy loaded baked potato created by Melanie Hale (@mimis.kitchen__), caught my attention. It’s fast, easy and "brilliant," according to one commenter.
In the video, the potatoes looked crispy, fluffy and absolutely delicious, so I decided to give them a try in my kitchen to see if they lived up to the hype.

The magic of this recipe is two-fold: first, cut the potatoes in half before baking, and secondly, bake them on top of a mix of butter and Parmesan cheese for a crispy, cheesy finish.
To make them, start by scrubbing large Russet potatoes until they’re clean, then slice them lengthwise to create sturdy halves. Each side gets brushed with olive oil and sprinkled with kosher (or garlic) salt and freshly ground black pepper. I used Sazon Complete because I wanted a little extra flavor.
Next, line a baking sheet with parchment paper to prevent sticking. Don't skip this part! I did my first time around, and my potatoes stuck to the baking sheet.
Once your parchment paper is in place, drop two pats of butter for every potato half directly onto the lined sheet. Sprinkle Parmesan cheese over the butter, then press the cut side of the potato halves right into the mixture. As the potatoes roast, the butter melts into the Parmesan, creating a crisp, golden crust that makes these potato halves unforgettable.
The potatoes bake at 425°F for 30 to 40 minutes, just until they’re tender inside and deeply browned on the outside. When they’re ready, let them cool a few minutes then slice them lengthwise and give them a little squeeze to loosen the fluffy insides.

My Honest Thoughts About This Crispy Baked Potato Recipe
These potatoes bake up crispy on the outside and soft on the inside. The contrast of the crispy skin, cheesy bottom and soft interior makes this method genius. Plus, halving the potatoes means they cook in about half the time as whole baked potatoes.
The potatoes are delicious straight from the oven, but the best part is how customizable they are. Classic add-ons like sour cream, shredded cheddar, scallions and chopped chives are always a hit. Crumbled bacon (which I added with sour cream) adds smoky crunch, while a little extra butter or Parmesan never hurts.
You can use a different cheese, like cheddar, but just be aware that it might not crisp the same way Parmesan does.
Add your favorite toppings to the crispy, cheesy potatoes. I added sour cream and crispy bacon to mine. This recipe is also a crowd-pleaser because it scales easily. Hosting game day? Make a big tray and put out toppings so guests can load them up. Need a quick weeknight dinner? Pair the potatoes with a salad and call it done. They’re satisfying enough to be the main course, but they also shine as a side dish.
In the end, what makes this recipe stand out is that it gives you the perfect baked potato without a ton of fuss. With just a few ingredients and a smart baking technique, your potatoes go from basic to crave-worthy.
