As I was scanning social media, I ran across content creator Steph Gigliotti's recipe for pumpkin overnight oats. When I first saw it, I wasn't 100% convinced, but I was intrigued enough to save the recipe so I could give it a try. Here's how it went when I made the super-easy breakfast in my kitchen.

After that, cover and refrigerate overnight (or at least 4 hours). In the morning, give it a good stir, add your favorite toppings, and enjoy cold—or warm it in the microwave for a cozy version. This recipe is ridiculously simple. You can find the full, detailed recipe in the caption of Gigliotti's post. Start with oats, pumpkin puree, pumpkin pie spice, maple syrup and milk (I used whole, but almond or oat milk works, too). Toss it all into a jar (I used an old jam jar and it worked perfectly), add a pinch of salt and give it a good stir. Put the lid on and let it sit overnight in the fridge. By morning, you’ll have a creamy, spiced pumpkin pie-inspired treat waiting for you.

My Honest Thoughts About Pumpkin Spice Overnight Oats
The flavor is shockingly indulgent for how little effort it requires. The pumpkin and the spice give the dish some richness, the oats soak up the sweetness and the maple syrup adds that caramelized fall flavor without being overpowering.
I actually cut the maple syrup in half from what Steph suggested, and it was still delicious. My mother-in-law loved it and likened it to her homemade pumpkin pie, and even my husband, who normally treats breakfast like it’s an optional suggestion, said he’d eat this regularly, especially with a scoop of vanilla protein powder mixed in.
Honestly, the first spoonful made me laugh because I couldn’t believe something this easy could taste so much like pumpkin pie. It’s basically dessert disguised as breakfast, and we're a household that eats pie for breakfast regularly. In this form, it's an indulgence we can feel good about!
