Palomino Mexican Restaurant in Evans to close in September

It’s not goodbye forever for Brenda Lucio to her customers of Palomino Mexican Restaurant in Evans. It’s more of a “see you soon.”

Lucio, who owns the restaurant with her husband, Richard, announced the restaurant will close at the end of September after serving the community for 20 years at 3390 23rd Ave.

    The owner of the building is looking for a long-term tenant, she said, and the Lucios weren’t looking to commit as they prepare to embark on a new hybrid restaurant in Greeley.

    “We’re at the end of our lease term after several extensions that we’ve done over the years,” she said. “We decided not to continue in that location.”

    The couple opened Palomino 20 years ago because they wanted a traditional Mexican restaurant with food inspired by Richard’s family’s Hispanic recipes.

    “We wanted it to be more authentic Mexican food,” she said.

    Despite the upcoming closure, the restaurant won’t be gone for good. Lucio said they’re actively searching for a location in Greeley for a hybrid restaurant that could be a combination of Palomino and Vatos Tacos and Tequila. The couple owns Vatos Tacos, Coyote’s Southwestern Grill and Blue Agave Grill.

    Vatos Tacos, located in Loveland and Fort Collins, offers a fast-casual menu of street tacos and drinks.

    Lucio said they’re taking calculated steps in finding a location for the possible new restaurant, so an immediate announcement isn’t expected.

    As the couple conducts their search, they’re opening a different type of eatery, a Firehouse Subs franchise. The restaurant is slated to open Monday, Sept. 15, in the former Subway building, 2000 35th Ave., Greeley, near the King Soopers Fuel Center in Westlake Village.

    The Lucios’ corporate chef, Trevor Schultz, is joining them on the franchise.

    Lucio said their second Palomino restaurant, 6190 Crossroads Boulevard, Loveland, remains open. She said they’re looking forward to seeing all their customers at their other northern Colorado restaurants. She thanked the community she grew up in and the one her family lives in for all the years of dining with them.

    Lucio said employees at the Evans location were offered transfers to their other restaurants or Firehouse Subs. She said most accepted the offer.
