In 1889, Emile Zatarain’s root beer gained popularity after being sold in his New Orleans grocery store, laying the foundation for one of the city’s most recognized food brands. More than a century later, Zatarain’s was acquired by McCormick & Company for $180 million.
According to The Advocate, demand for Zatarain’s root beer grew so much that Emile eventually left the grocery business. He established a company and built a factory to produce root beer and spices. In the 1920s, his sons took over the business and expanded its product line by adding remoulade sauce and olive salad.

The business remained under family ownership until 1963, when the Zatarain family sold the company to James Grinstead Viavant, founder of Avondale Shipyards. Viavant then relocated the factory to a modern facility in Gretna, Louisiana.
Viavant sold the company in 1984, after which it went through several ownership changes before being purchased by McCormick in 2003. In its announcement, Robert J. Lawless, chairman, president and CEO of McCormick, described the agreement as an opportunity to expand the company’s portfolio of leading brands.
McCormick anticipated that the acquisition would contribute around $45 million to 2003 net sales.
“We are pleased to add to our portfolio of products the Zatarain’s brand, which delivers the fun and flavor of New Orleans to consumers,” he stated.
Lawless also outlined plans to pursue growth in both U.S. and global markets, as well as among food service customers. McCormick welcomed Zatarain’s employees into its organization as part of the transition.
