An entree cooked up by Northridge High School students will appear on lunch menus across Greeley-Evans School District 6 this spring.

After serving hundreds of samples to Northridge students, who tried and voted on the dishes during lunch, a clear favorite emerged: the Grizzly Ranch’n Chicken Wrap.

The item consists of a wrap filled with a baked chicken thigh, lettuce, tomato, cheese, homemade ranch dressing with less sodium and various seasonings.

Students in ProStart, an industry-backed hospitality education program offered by District 6, created the lunch item as a group. The nationally certified program introduces students to a wide variety of careers in the hospitality industry.

“I wanted to be a private chef when I was younger,” Northridge junior Cole Barber said.

Barber helped create the wrap and said that teaming up with his classmates on the project made him even more interested in the culinary field.

“Working as a group to help make a creation that a lot of people like … made me happy,” Barber said.

Northridge junior Mary Yong, who also helped develop the wrap, said it was great to see her classmates so passionate about the project.

“I might go into culinary if the medical field isn’t for me,” Yong said.

Barber, Yong and their classmates learned from the district’s menu specialist about reimbursable meals and the requirements that school lunch items must meet. Certain amounts of fruit, vegetables, grains, meats or meat alternatives must be offered to students based upon their grade level. Sodium limits must be followed too.

Each student group created a recipe prototype, and their classes voted on which ones would move forward for review by the Student Health Advisory Council.

The council narrowed it down to the top two dishes, the wrap and carne asada nachos. After making a few final adjustments, students mass-produced their dishes for Northridge’s general population to vote on during lunch.

The Grizzly Ranch’n Chicken Wrap won and will be served at least once on the lunch menu across the district.

“I told (my students) with tears in my eyes that I couldn’t have been prouder,” said Joanna Fedor, a family and consumer science teacher at Northridge. “The coolest part was I really was able to just step back and they took charge.”
