The Hungry Swimmer: Spicy Tuna Rice Bowl

If you’re in need of a quick lunch that feels put together, this bowl is for you! It is quick and full of protein, carbs, healthy fats, and of course, flavor.

    On days when I don’t feel like cooking an extravagant meal, this hodgepodge of pantry staples keeps me full and satisfied. I love this bowl because there is no right way to make it. Swap toppings, change the sauce, add more protein or veggies, it is super easy to customize and never gets old!

    Ingredients 

    1 pouch or tin spicy yellowfin tuna (my favorite brands are Natural Catch or FishWife) 1 cup cooked jasmine rice ¼ avocado, sliced ¼ cup kimchi 2 tbsp pickled red onion 1 tbsp green onion, chopped 1 package of seaweed sheets spicy mayo drizzle

    Let’s Cook! 

    Cook the rice Prepare jasmine rice according to package directions (or use leftovers—way easier). Build your base Add warm rice to a bowl.  Add the tuna Spoon the spicy tuna right on top of the rice. Layer the toppings Add kimchi, avocado slices, and pickled red onion around the bowl. Finish it off Sprinkle green onions, add a drizzle of spicy mayo if you want, and stick in your seaweed sheets for scooping.
