Somewhere between holiday parties and Super Bowl snack spreads, the internet has collectively decided that full, composed meals (as well as maybe meal prepping) are a tad overrated, and what we all really want is a beautifully arranged plate of delicious things. The most recent entry into this category? The ploughman’s lunch, a traditional British pub staple that has suddenly gone viral thanks to TikTok creatorCourtney Cook Bales, whose snacky but satisfying lunches have been racking up millions of views. If her name sounds familiar, it’s because she’s the same creator behind the viral cheese-stuffed sweet potato that's also been making the social media rounds.Cook Bales says the attention her recipes have been getting is surprising. "I absolutely did not expect it to blow up the way it did…I was shocked. There are so many talented food creators out there, so the attention felt really humbling," she tells Parade. "I still feel a little unworthy of how big those videos got, but mostly just grateful that people connected with me as just a regular working parent from Georgia."
This time, she’s turned her attention to the ploughman's lunch, a dish that’s been quietly perfect for centuries: a plate of good cheese, crusty bread and tangy pickles, all meant to be eaten slowly and joyfully.Cook Bales, who is a British literature teacher, knows that busy people often need a lunch that's pretty much assembly only. As a former teacher, I felt that deeply. There are days when you’ve spent hours managing a classroom, answering emails or staring at a screen and what you really want is a smorgasbord of your favorite things: something easy to throw together and satisfying enough to get you through the afternoon. Bonus points if every bite is delicious!Cook Bales nailed that feeling perfectly—her ploughman’s lunch isn’t about perfection or strict rules; it’s about building a little grazing board that feels comforting, nourishing and just a bit indulgent, even if you’re eating it between Zoom calls. A ploughman’s lunch is a classic British pub meal built around a few simple components: good cheese, crusty bread and something pickled, often served with extras like fruit, chutney or cold meats. It's the kind of thing a farm worker (or "ploughman," get it?) could eat midday without needing a hot meal. Over time, the ploughman's lunch became a staple in pubs across the UK, often served as a light lunch or casual dinner. Ina Garten even has her own take on it, which tells you everything you need to know about how universally appealing a plate of cheese and bread can be (as if we needed to convince you).

What's the Difference Between a Ploughman's Lunch and a Charcuterie Board?
A ploughman's lunch and a charcuterie board have many things in common. They both include cheese, bread, meats and other tasty things served on a board. The main differences are that a ploughman's lunch is British and a charcuterie board is French; a charcuterie board typically has cured meat vs. the ham, roast beef or pork pie that you might find on a ploughman's lunch; and the two snack meals have different vibes. Generally speaking, a ploughman's lunch is more rustic and a charcuterie board has a slightly fancier feel.

Cook Bales' TikTok videos took this old-school British lunch and reframed it for modern life. "I honestly just made it on a whim after a TikTok viewer suggested I try it in my comments," she tells Parade. "It’s more inspired by the spirit of a ploughman’s than a strict, traditional version. I love simple, snacky lunches, and the ploughman’s lunch felt like the perfect cozy, low-effort meal built from things I already had."She says her inspiration for her recipes comes from all over the place. "I’ve lived overseas and taken several cooking classes, which really shaped how I think about food," she shares. "I’m also a British literature teacher, and I’m constantly inspired by meals and foods mentioned in books; sometimes I just have to try recreating them. A lot of my ideas also come from necessity, cravings, experimentation and a genuine appreciation for cultural foods outside my own."

♬ original sound - Courtney CookHer ploughman's lunch approach is rooted in the basics of the board but allows room for creativity. "Mine is definitely a loose interpretation," she explains. "I try to hit the basics…good sharp cheese, crunchy bread and something pickled…which, from my research, are the core elements. From there, I give myself freedom based on what I have and what sounds good."
Cook Bales says that the thrown-together lunch feels a bit ironic because she plans everything else in her life. "When it comes to food, I grocery shop for ingredients that look good, and my lunches usually come together based on what’s in my fridge and what needs to be used before it goes bad. Some of my favorite combinations have come from those 'use it up' moments," she shares.Related: I Tried the Viral British Cheese Sandwich and Found My New Favorite Weekday Lunch
What Ingredients Do You Need for a Ploughman’s Lunch?

The beauty of this trend is that there’s no single "right" ingredients list, but you’ll want a mix of cheeses and bread, plus something pickled and a few fresh or savory extras. The goal is variety—crunchy, creamy, salty, sweet and tangy all on one board. I share more about how I selected the ingredients for my ploughman's lunch below.

There’s no real cooking involved, which is part of the appeal. When I made mine, I kept in mind that we eat with our eyes first. So instead of cutting up all the elements and throwing them on a plate, I made sure to carefully arrange my ingredients.

So, slice your cheeses, cut your bread, wash and trim your produce, and arrange everything on a plate or board in a way that feels inviting to you. Add small bowls or dollops of mustard, chutney or pickles and let the colors and textures do the work. Think less "recipe" and more "delicious pile of things you love."But, ultimately, Cook Bales' biggest piece of advice is not to overthink it. "For a ploughman’s lunch, I always suggest looking at pub menus from UK restaurants to get a feel for traditional pairings and build from there," she says. "But at its heart, it’s simple and delicious…cheese, bread, pickles, maybe some fruit or chutney…and it’s very forgiving."Related: The Simple Way To Make Your Charcuterie Board 10x Better, According to the ‘Cheese Gal’
I absolutely loved this little board. It felt like the British version of "girl dinner" or an upgraded cheese board that actually counts as a meal instead of something rushed and discombulated, like half an apple with a side of shredded cheese straight from the bag.
For my board, I took advice from Cook Bales and shopped my fridge before buying anything else. I went loosely off Cook Bales' TikToks and loosely off Ina's recipe. I had some yellow carrots, onion confit, a hunk of Gruyère and a lone clementine in my fridge.
From there, I added some jewel-toned beet chunks, bright pink and purple radishes, French ham, cheddar, a punchy yellow mustard, a crusty baguette and an apple. Honestly, the hardest part of making this was deciding where to place everything on my board so it was aesthetically pleasing.
Deciding what bites to eat together became a delicious choose-your-own adventure as I learned that a bite of salted radish with the mustard was divine, as was the ham with apple and a smidge of onion confit. I sat in the sun, working and grazing, totally content with my viral lunch that hit all the right notes: satisfying, sweet and savory. Maybe TikTok knows what it's doing after all.
