Hatched, a fast-casual brunch concept from the owners of the Roost & Roast restaurant, has cracked its first eggs in Palo Alto.
The restaurant opened Tuesday at Town & Country Village shopping center with an egg-forward sandwich menu that includes the obligatory scrambled eggs, cheddar, caramelized onions, arugula and aioli on a bun (called the BFF); the BEC, with bacon, eggs and cheddar; the Ono, which is fried chicken, fried egg and sriracha aioli; and versions featuring pork belly or avocado or shiitake mushrooms.

Besides the egg sandwiches, Hatched offers three meal-size salads — Miso Caesar, Avocado Chop and Arugula & Parm — along with avocado toast, a smash burger and both classic and garlic parmesan tater tots.
The Ube Latte is an espresso latte with ube syrup. The B.F.F. is a sandwich with creamy scrambled eggs, cheddar cheese, chives, caramelized onions and arugula served between a toasted bun with garlic aioli.
