Begin by heating a few tablespoons of olive oil in a large pot over medium heat. Add the mirepoix. Cook for about 15 minutes, stirring often, until the mirepoix is fragrant and the onions are translucent.

Next, add the chicken meatballs and cook until they're browned on the outside. This is how I make the recipe, but if you prefer, you can start by browning the meatballs in the oil until browned on the outside, transfer them to a plate, then add the mirepoix and cook until softened. If you go that route, you'll add the browned meatballs back into the pot and continue with the recipe.

Add the chicken bone broth and orzo or rice-orzo to the pot, then bring the mixture to a boil.

Lower the heat, and let the soup simmer until the meatballs are tender and cooked through and the flavors meld, which should take about 30 minutes.

When ready to serve, ladle the soup into bowls and add a squeeze of fresh lemon juice to each portion. Top with optional Parmesan cheese. I'm a big fan of lemony soups, so I also serve the soup with more lemon to add as you eat.

This soup is very easy to customize. I usually use orzo, but tortellini, egg noodles or rice are tasty options as well. Whenever TJ’s is out of classic orzo, or I feel especially creative, I opt for their Rice Orzo Pilaf mix to get the best of both worlds.
You can also prepare the chicken meatballs in advance—by broiling them in the oven or browning them—but I prefer adding everything to the pot so the meatballs can cook in the broth, which gives the soup a richer flavor.

How To Store This Soup
Unlike some soups that really need to rest overnight to let the flavors meld, this soup is great fresh off the stove. That said, leftovers are also tasty. Transfer the soup to an airtight container and stash it in the fridge for up to three days. (It makes a great quick lunch.) The soup can also be frozen for up to a month.
