I love a good rotisserie chicken. With just one bird, you can make s many meals, like chicken salad, soups, sandwiches, wraps, casseroles, tacos or just shred some meat and toss it over a fresh green salad. It’s great for meal prep because you can eat all week without feeling like you’re eating the same meal over and over.
While store-bought rotisserie chickens are convenient (and often very affordable), making your own means you control the flavor, ingredients and freshness. Of course, that means you have to have the equipment and know-how to make one.
That's why I got excited when I ran across content creator Steph Gigliotti's method for making a rotisserie-style chicken at home. It delivers a juicy, flavorful chicken every time, and all it requires is a Crock-Pot.

Gigliotti's method starts with a simple butter rub made with butter, onion powder, garlic powder, oregano, salt, pepper and paprika. Of course, you can swap in your favorite seasoning blend, such as lemon pepper, Cajun or an Italian mix, which makes it endlessly and easily customizable.
To start, soften your butter and stir in your seasonings until well combined. Next, slather the mixture all over your raw chicken, making sure to rub some under the skin for maximum flavor. Cut a lemon in half and place it inside the cavity of the chicken. Slice one onion and spread it in an even layer on the bottom of your crockpot to act as a flavorful base.
Place the chicken directly on top of the onions, pop on the lid and cook on low for about 6 hours or on high for 3 hours.
When it’s done, the chicken will be tender, juicy and flavorful. You can serve it right away, shred it for recipes or store it for later use in your weekly meal prep.

Pros and Cons of the Crock-Pot Rotisserie-Style Chicken Method
Like any cooking method, making rotisserie-style chicken in the Crock-Pot has its pros and cons.
Once it’s in the Crock-Pot, you can walk away and let it do its thing, which is perfect for busy days. Plus, the slow cooking process ensures the chicken stays tender. By making your own chicken, you can season it exactly how you like and one chicken can be the base for multiple meals, but it's also great on its own.
On the downside, the Crock-Pot steams the chicken, so the skin will be soft. If crispy skin is a must, you’ll need to pop it under the broiler for a few minutes after cooking.
Also, a very large chicken may not fit in smaller Crock-Pots, and if you need a chicken quickly, this isn't the method because Crock-Pots are all about the low and slow cooking. This means you’ll need to plan ahead.
That said, if you’re looking for a low-effort, high-reward way to make a flavorful, fall-off-the-bone chicken, this method is hard to beat!
