The Summery Ingredient Lindsay Lohan Adds to Her Mac and Cheese

Today, July 2nd, we celebrate the 39th birthday of Lindsay Lohan. From starring in cult classic movies likeThe Parent Trap and Mean Girls to debuting a new accent to getting married and becoming a mother, Lindsay Lohan has a way of keeping her fans on their toes.

While the Mean Girls star disappeared from the spotlight for a little bit, she’s back in a big way. Lohan, along with her co-star and movie mom Jamie Lee Curtis, is gearing up for the release of Freakier Friday, the sequel to the 2000 blockbuster Freaky Friday.

    One thing you might not have known about Lohan is that she likes to cook. She's cooked with chefs like Jamie Oliver and has her own recipes. You can find her takes on meatloaf, pasta salad dressing, meatballs and more in the "Food" section of her official website. We recently took a jog through the recipes and were drawn to her summery take on mac and cheese.

    As much as we love a birthday cake, we think a pan of mac and cheese with a candle in it would be a pretty great birthday treat, too. Here's what you need to know about Lohan's next-level mac and cheese.

    Mac and cheese is absolutely delicious, and it’s hard to go wrong with this classic, but Lohan's recipe gives the cheesy dish a fresh twist.

    Lohan’s recipe features sweet corn, which adds a little hit of sweetness and texture to the pasta dish. She calls for canned corn, which she cooks on the stove with some cornstarch to thicken up the vegetable mixture. She uses a mix of shredded mozzarella and cheddar, adds a little onion powder to the mix and says you can serve with sriracha, if you'd like.

    The recipe method is minimal and Lohan doesn’t offer any additional explanation or direction or explain where the recipe is from. It's just one of eight recipes under the "My Recipes" heading in the “Food” tab on lindsaylohan.com. It's mysterious and a little random, but also strangely charming, which seems on-brand for Lohan.

    Corn and macaroni and cheese might seem like a curious pairing until you think about elote and Korean corn cheese. Also, this wouldn't be the first time Lohan has mashed two unlikely foods together. Who can forget that scene in The Parent Trap when Hallie and Annie introduced us to an iconic snack combination that has stood the test of time: Oreos and peanut butter. That's all to say, if a food is approved by Lindsay, we stand by it.

    How to Make Lindsay Lohan’s Mac and Cheese

    You can find the full recipe for Lindsay Lohan's sweet corn mac and cheese on her website, but here's a quick run-down of how the mac gets made. Note that Lohan is a very casual recipe writer, which makes us think these are actually her recipes, so we've had to make some best guesses here.

    Start things off by preheating your oven to 350°. From there, Lohan recommends mixing cornstarch and canned corn on the stove, heating the two up. Sprinkle in onion powder and add a little water. 

    Cook and drain the macaroni before dumping shredded mozzarella and shredded cheddar cheese on top. (We assume this is all happening in the baking dish or in a separate large bowl, though Lohan doesn't specify.) Add the thickened corn mixture to the pasta and cheese and mix everything together. Mix "mashed bread crumbs" with a little olive oil and sprinkle on top of the pasta mixture. Bake for 15 minutes, and serve warm.
