The team behind the award-winning Monteverde Restaurant & Pastificio in Chicago’s West Loop neighborhood will open their second restaurant in Bucktown.
James Beard Award-winning chef Sarah Grueneberg and partners Jaime Canete and Rob Mosher came together to create Trattoria Lo So, expected to open at 2044 W. Armitage Ave. in early 2027.
“Literally translated to ‘the trattoria I know,’ Lo So is Grueneberg’s interpretation of the traditional Italian eatery with a menu of soulful dishes brought to life by Executive Chef and 2026 James Beard Award Emerging Chef finalist Bailey Sullivan,” a press release about the restaurant opening said.
Dried pastas imported from “esteemed Italian producer Mancini Pastificio Agricolo” will be “the true star of the menu,” the press release said. The dried pasta showcases both “Grueneberg and Sullivan’s love of the ‘pasta marriage ceremony,’ the time-honored Italian tradition of cooking pasta in the sauce itself.”
The menu will also feature fresh pastas cooked al forno in the wood-fired oven.
Trattoria Lo So will take over what previously was Jack & Gingers. The new spot will have 120 seats, a custom skylight and design inspired by traditional Italian architecture, according to the press release.
