Like everyone else right now, I have been craving something bright and cheerful at the end of winter, and baking up something pineapple felt like a total shortcut to sunshine. There are plenty of versions of this cake online: some with nuts, some with extra spices, some that lean hard into the tropical theme, but I wanted to keep things classic. I went with the version from the blog Everyday Family Cooking, using crushed pineapple in juice and the same cake mix that ranked #1 in our boxed yellow cake taste test last year.

There’s no creaming butter, no multiple bowls, no sifting and no stress. Despite the very unglamorous name, the finished product is typically somewhere between a cobbler and a cake, with a soft, fruit-filled base and a buttery, golden topping.

♬ original sound - Your Barefoot Neighbor - Your Barefoot NeighborI followed the directions from Everyday Family Cooking and didn’t drain it at all, which meant there was a lot of liquid going into the pan. At first, I was nervous about the amount of liquid, but a little voice told me to trust the process. That extra moisture is what keeps the cake incredibly soft and helps the edges caramelize as it bakes. It does mean a slightly longer bake time, but the payoff is totally worth it.

The crunchy edges melded with the pineapple into something rich and jammy, while the center of the cake stayed pale yellow, moist and tender. It wasn’t overly sweet, which I appreciated, and the boxed yellow cake flavor definitely came through (Pillsbury, FTW!). It’s homey and unmistakably nostalgic with a tropical twist.
