How to Make Bacon-Wrapped Carrots

Mansfield's recipe is super simple. I started by scrubbing and peeling my carrots. From there, I wrapped each carrot with raw bacon as tightly as possible, then arranged them on a foil-lined baking sheet. (The foil makes cleanup easy and prevents sticking as the bacon renders.) I slid the baking sheet into a 400° oven and set the timer for 20 minutes.

After the first 20-minute roast, remove the baking sheet from the oven, brush the glaze on the carrots, flip the carrots over, then brush with glaze on the other side. Pop them back in the oven for another 20 minutes, or until the bacon is fully cooked and crisped, and the carrots are tender.
