This step is crucial because the oils from the zest give the syrup its bold citrus flavor.Pour in boiling water and whisk until the sugar dissolves completely. Strain the mixture through a fine sieve into another bowl to remove the zest. You’ll be left with a smooth lemon-lime syrup. Let it cool before using. (I had a bit of zest end up in my syrup, but it didn't change the flavor or texture and was fine to drink.)

My Honest Thoughts

The lime juice (mine had a little pulp in it) at the end gives it an extra tangy kick that cuts through the syrup, keeping it from being too heavy. Using chilled sparkling water keeps it crisp and refreshing, especially over ice.

The only downside is that homemade Sprite loses fizz quickly because it doesn’t trap high-pressure CO₂ the way factory-sealed bottles do. That means you’ll want to drink it fresh and right away, but that’s part of the charm. What you lose in bubbles, you gain in real flavor, nutrients and sweetness control.
