While the overall sales of alcohol worldwide decreased by 1%, the consumption of non-alcoholic beer grew 9% worldwide in 2024, according to IWSR, the global leader in alcohol data and insights. What Is NA beer and How Is It Made?
Many people wonder how brewers can pull off making a non-alcoholic beer. To answer that question, you first need to understand how traditional beer is made and where the alcohol comes into play. Alcohol in beer is created during the brewing process, when yeast is added to wort (a sugary batch of grains and hops) and begins fermenting.
When brewers want to make a beverage that is crisp and yeasty like your favorite beer without any alcohol, there are two paths they can take that both result in delicious alcohol-free brews.
Some brewers opt to remove the alcohol by cooking it off once the beer is fully brewed. Brewers can also create a beverage that will never develop alcohol by keeping it at a lower temperature and controlling the amount of sugar in the wort. If there's less fermentable material in the wort, very little alcohol will be produced. With this method, it’s important to note that some beverages labeled non-alcoholic do contain a small amount of alcohol—drinks can be labeled non-alcoholic with up to .5 percent alcohol.

It’s my go-to when I want the comfort of a pint and the clarity of a Monday morning,” says Tantai “Tan” Khantachavana, the head bartender at BKK New York.

Meaghen Grace, a former New York City bartender and host of the YouTube channel The Wee Pearl, says it’s the bottle she’d reach for if she were hanging out with friends but didn’t want to imbibe.
“I drink this one all the time,” she says. “I think it is mighty fine. It has some maltiness in there, but it’s super crisp and light and easy to drink.”

BERO, a NA beer company co-founded by actor Tom Holland, offers four non-alcoholic options, including a golden pilsner-style beer and frequent limited-edition drops, like the coffee draught collab with Robert Downey Jr.'s "happy" coffee this past October.
The entire portfolio is popular among bartenders, including Juliette Saputo, the bar manager for Broken Shaker Miami and Ray's Hometown Bar Miami. “I think it’s awesome that they have so many options with different styles of beer so that everyone can feel included even when you aren’t imbibing,” she says.
Anne Becerra, a certified cicerone (certified beer expert) who hosts regular beer education events, echoed that sentiment, but shared that her favorite in the lineup is the Edge Hill Hazy IPA. “It's just like a typical hazy IPA with a lot of citrus notes,” she says. “It’s very bright with mango, orange zest and tropical notes to it.”

Nate Capenos, the head bartender at COTE Korean Steakhouse, says the Michelin-starred restaurant in NYC and other outposts across the country exclusively offer Athletic Brewing as their non-alcoholic beer option.
“I love that their product is more than just hopped sparkling water, it really gives you the heft of a beer,” he says. “Atlética, their Mexican-Style Copper, is my favorite with its refreshing floral and malty zip.”

Another popular pour from Athletic Brewing is Run Wild, an IPA-style drink with a blend of five Northwest hops offering an approachable bitterness. “I’m no longer much of an IPA drinker, but I find Run Wild to be an incredibly full-flavored non-alcoholic beer that, to me, almost drinks more like a heady pilsner,” Brian Callahan, the owner and beverage director at Boston’s Darling, says. “You could easily put it in front of me blind and I probably wouldn’t be able to guess it was NA.”

Heaps Normal, an Australian company that exclusively brews NA beer, is a favorite of Trevor Wolfe, the co-founder of The Zero Proof, an online non-alcoholic marketplace. “Right now, I’m really impressed by Heaps Normal’s Half Day Hazy,” he says. “It has this great tropical hop character that feels like a true craft IPA.”

These two beers really show how far non-alcoholic brewing has come.”

The New York City-based brewery Threes Brewing recently released hop water, a sparkling water infused with guava and Galaxy Hops. “Plot Twist fills a couple of gaps in our lineup that we're excited about. It's both non-alcoholic and gluten-free, which turns out to be harder to find than you'd think,” says head brewer Josh Penney. “Hop waters have gotten surprisingly good lately. They work well for people taking a break from drinking, or just as a palate cleanser between beers. Sometimes you want the flavor without all the commitment.”
