Inspired by ancient Aztec beverages, The Boss Hog XII: Feather & Flame incorporates traditional flavors found in central Mexico, where the WhistlePig team traveled to experience them directly. There’s pulque, a fermented beverage made with agave that provides an earthy flavor to The Boss Hog, and xocolatl, a bitter and spicy drink made from cocoa beans.
“Pulque and xocolatl are two powerful flavors in central Mexico. Pulque’s continuous fermentation process means it has to be consumed quickly before it spoils, and xocolatl doesn’t match what most people think of as ‘chocolate,’” said Meghan Ireland, Head Blender at WhistlePig, in a statement shared with Parade. “We embraced the strength and power of the flavors and created the world’s first whiskey finished in pulque curado de cacao barrels to bring a rich, savory, aromatic, and earthy elevation to the complex character of Rye Whiskey.”
The whiskey was first aged in new American Oak barrels before finishing in barrels seasoned with pulque curado crafted from agave, cacao, and Mexican chiltepín, guajillo, and pasilla peppers. At first taste, The Boss Hog XII is citrusy and warm with a hint of smoke before building into a rich, earthy, cocoa flavor, and finishing with an herbaceous chili pepper taste that lingers.
