A former Los Angeles-area chef whose Bar Chelou was named one of the best 12 new restaurants in America in 2023, will team up with Hop Alley in Denver starting this month for a “culinary collaboration” and pop-up.

Douglas Rankin ran Bar Chelou in Pasadena for two years, racking up accolades from the New York Times, Bon Appétit, Eater and other publications, before closing in February. At the time, he said the decision was the result of decreased business brought about by the nearby Eaton Fire, which killed 17 people and burned 9,000 buildings in the Altadena neighborhood.

Now Rankin and his family have moved to Denver, where he is planning to reopen Bar Chelou — location yet to be announced — sometime in 2026, according to his wife, public relations strategist Stephanie Senter-Rankin. The restaurant describes itself as an upscale bistro that focuses on French food and wine, with twists coming from both Spanish and Asian cuisine.

In the meantime, he’ll begin a residency at Hop Alley and help it to restart its six-seat chef’s counter with a six-course dinner series beginning Oct. 23. The tasting menu ($125), which is completely separate from Hop Alley’s regular menu, will be offered Thursday through Saturday nights. Rankin will be joined by Hop Alley sous chef Josh Sanford, “with curated beverage pairings available from James Beard semifinalist Jacob Roadhouse and award-winning bar manager Dustin Lawlor,” according to Hop Alley.

Hop Alley is a three-time Michelin Bib Gourmand-awarded modern Chinese restaurant at 3500 Larimer St in River North. It was founded in 2015 by chef and restaurateur Tommy Lee, who also owns two Uncle ramen shops in Denver.

Senter-Rankin said the residency will last until Bar Chelou opens next year.
