LA JOLLA – I love Halloween. It’s a great time of year to get cuisine-creative.
In that spirit, here are some frightfully easy recipes to make for the season – if I may be cryptic!
Creature fingers in blood red sauce
15 minutes
Ingredients: Whole Foods/Costco or garden olive oil, tomatoes, cooked beets, asparagus, kalamata or your choice olives.
Tools needed: Blender, large spoon, plate, colander, sharp knife.
Prep and serve: For two people, blend 3 beets, 1 cup tomatoes, 4 T olive oil. Pour onto 2 plates, rinse asparagus, break off asparagus tips with 3 inches of stem, place on sauce, tips out, make olive slices and place as “fingernails.”

Ingredients: Whole Foods/Costco or garden monk fruit, cooked pumpkin, nutmeg, chicken stock, garlic, cayenne pepper, and organic thick yogurt.
Tools needed: Cooking pan, large spoon, 2 large soup bowls, chopsticks or similar, plastic sandwich bag, scissors, spoon.
Prep and serve: For two, cook 1 cup of pumpkin, ¾ cup of chicken stock in a pan, 3 cloves of crushed garlic, 4 shakes of cayenne pepper. Simmer 10 minutes, stir in 3 T of monk fruit, and pour into 2 large soup bowls, put approximately half a cup yogurt into a sandwich bag, squeeze to the bottom corner, cut a tip.
Squeeze a dollar coin -sized amount of yogurt into each bowl, then add a spiral to the bowl edge, draw 6-8 yogurt lines with the chopstick (or similar tool) spaced evenly from the center to the bowl edge, et voila, you have your spider web.
