Every year when fall and winter roll around, it's completely natural to find yourself eschewing all those light, fresh salads we lived on during summer and craving comfort food that you know will keep you warm and satisfied.

When I think of comfort food, casseroles are the first thing that comes to mind. Made in one dish, served from oven to table and overflowing with delicious flavors, there isn't a casserole that I'll reject—especially when it's chilly outside.

    While casseroles may often be heavy, loaded with carbs, pasta, rice and other carb-heavy ingredients, it's not that hard to make a lighter version.

    Healthy casseroles can also be chock full of veggies for fiber and color, use less cream or cheese so they're lighter on the stomach or even forgo wheat altogether for gluten-free alternatives.
