After years of behind-the-scenes work by the franchise owners, a Firehouse Subs restaurant is expected to open on Sept. 15 in the Westlake Village Shopping Center at 2000 35th Ave.
Veteran restaurateur Richard Lucio and corporate chef Trevor Schultze grew up in Greeley and have owned the Firehouse Subs license since before the COVID pandemic. They have been searching for the best location for a sandwich shop, Lucio said.
Once the Subway shop closed in the shopping center, Dana Roche, a member of PB Roche Real Estate Solutions, which owns the center, reached out to Lucio, Roche said. Lease space in the center is $25 to $35 per square foot, with the corner spot for the sandwich shop toward the higher end of the range, Roche said.
“We’re definitely really pumped to get a Firehouse Subs,” Roche said. “There’s a lot of energy, and we’re stoked to partner with them.”
There’s work going on to get the restaurant ready, but the owners plan a soft opening on Sept. 15, Lucio said. There’s a banner on the building and social media speculation on Facebook.
“(The) business model is unique, and they’re giving back to the community, and we’re a very community-based company ourselves,” Lucio said about the Firehouse Subs chain. “They have good food and a good mission statement, and it just made sense.”
Lucio and his wife, Brenda, own eight restaurants around Northern Colorado: Coyote’s Southwestern Grill, in Greeley; Palomino Mexican Restaurant, in Loveland and Greeley; Blue Agave Grill in Old Town Fort Collins and downtown Denver; and Vatos Tacos & Tequila in Old Town Fort Collins, Loveland and Westminster.
Firehouse Restaurant Group Inc., doing business as Firehouse Subs is based in Jacksonville, Florida. It was founded by former firefighters. Westlake was built in 1992. Roche is a family-owned company that owns and manages properties around town.
