The Dad-Approved Way to Make Scrambled Eggs 10x Better

Here at Parade, we're big on breakfast. We have strong feelings about English muffins, love a smart pancake hack, can never get enough orange juice and are always on the hunt for new, interesting and delicious egg recipes, particularly scrambled egg recipes. In our social media travels, we run across lots of inspiration, and one of our most recent breakfast ah-ha moments came from chef, video host and food creator Farideh Sadeghin (@fardieh), who shared a recipe for date eggs.This new-to-us dish is a common Iranian breakfast and was inspired by the scrambled eggs Sadeghin's dad makes. (We love a family recipe!) Although dates and eggs might seem like an unlikely pairing at first, the soft scrambled eggs folded with warm, buttery dates and creamy chunks of cream cheese come together in a beautifully balanced, sweet-and-savory dish.     The combination of dates and eggs is common in the Middle East, including in Iran, where Sadeghin's family is from. After we saw her recipe, we started seeing the dish elsewhere (probably because our social media algorithm was doing its thing), including on @themediterreneanish, where cookbook author and food creator Suzy Karadsheh shared her version of date eggs from her childhood in Egypt. Dates are a common ingredient in the region, so it makes sense that they'd find their way into many dishes, including this quick and easy breakfast dish. Sadeghin's dad usually keeps things simple with just scrambled eggs and dates, though she makes it her own by adding cream cheese (inspired by a family friend's date eggs) and shredded cheese. Like many recipes, especially something as simple as scrambled eggs, there are often as many variations as there are cooks.“The pairing of something sweet, like dates, with something like scrambled eggs for breakfast is definitely surprising for people, but I think it really works,” Sadeghin tells Parade. “The dates have a really nice caramel flavor that pairs wonderfully with the creaminess of scrambled eggs.     How to Make Date Eggs

    The dish is simple. To make Sadeghin's version, start by sautéing some pitted dates in butter. This first step really brings out the rich, caramel note in the dates, which is the key to this dish. When gently warmed in butter, the dates plump up and soften, infusing the eggs with a hint of natural sweetness and deep flavor. Next, pour whisked eggs on top of the dates. Scramble the eggs and dates together and as the eggs begin to firm up, add in chunks of cream cheese, stirring gently until the cream cheese melts and the eggs are creamy and cooked through. Stir in some grated cheese once the eggs are nearly done, then season with salt and pepper to taste.

    Sadeghin offers a few tips for making this dish like a pro.

    “Plumping the dates gently in the skillet with butter is key," she reveals. "If your dates are a bit drier than usual, this step helps keep them soft so they almost melt into the eggs.”

    She also shares that this isn't a dish you should rush. “Low and slow is always key when cooking scrambled eggs in my opinion, and for this dish, it's vital," she explains. "The creaminess of the soft scramble with the plump pieces of date is what makes it so magical.”

    “This dish definitely takes around 15 minutes,” she adds. “Sometimes my mom is slow to come down in the morning, so Dad starts the dates first and cooks the eggs reaaaaaally slow to give her time to get moving.”

    Other Tasty Variations on Date Eggs

    Though Sadeghin's family keeps the dish fairly straightforward, she’s not afraid to experiment.

    “Herbs are really big in Iranian cuisine, and a plate of fresh herbs is almost always on the table at mealtime,” she says. Parsley, dill, mint, scallions or tarragon can all be tossed in at the end or sprinkled on top for brightness. “My dad and I eat them with walnuts as well,” she adds.

    She’s also tried a baked version of these eggs, sharing, “I’ve done a twist on it by making it into a frittata and adding fresh herbs, sumac and chopped nuts, which was lovely."
