New farm-to-table restaurant flourishes at Descanso Gardens

When people visit Descanso Gardens in La Cañada-Flintridge they are able to stroll through a mix of wild and cultivated land where they can see California native plants, walk through an oak forest or admire rose and Japanese gardens, and now they’re also able to find their way to a new restaurant inspired by these lush surroundings.

The recently opened Farmhouse at Descanso Gardens is now in full swing with a new summer brunch menu and rotating dishes driven by whatever happens to be in season at local farmers markets and a design that incorporates the park itself, including fallen trees that have become part of the restaurant.

    “The idea of Farmhouse is taking the garden and bringing it indoors in a way,” said Adam Cherney, the executive chef of the new restaurant, which opened a couple of months ago inside Descanso Gardens.

    “It’s scratch rustic cooking,”  he added.

    The Food

    The restaurant is a collaboration between chef partner Rich Mead, who opened Farmhouse at Orange County’s Roger’s Gardens in 2016, and Executive Chef Cherney. They have come up with  a menu driven by the farm-to-table concept that includes the current rotating summer brunch menu that offers highlights such as chickpeas with braised greens, spiced tomato sauce and farm eggs.

    “We soak the chickpeas overnight and then we cook them with paprika, cinnamon and herbs and we put them in a pot with some greens,” he said.

    Another one of the current stars in the evolving brunch menu is the Sonoran Grain Rice Pudding,  also known as the  “Arroz Bionico,” which translates into bionic rice. While it’s not going to give you super powers, this pastry dish will give you a unique taste of Latin-style pudding. It’s made with coconut, heirloom melon, red plums, apricot and candied cocoa nibs plus a Sonoran wheat grain.

    “It’s an ancient grain and it’s our play on a traditional Mexican dessert and it’s really great for brunch because we serve it with fresh fruit, whatever we have available. So right now we’ve been doing peaches, plumbs, and apricots,” Cherney said.

    Some of the main menu items include dishes like Herb-Roasted Jidori Chicken served with roasted carrots, cipollini onions, broccoli, fingerling potatoes and chicken jus. It’s cooked in a pizza oven to make the skin more crispy.

    And speaking of pizzas, Cherney said that the restaurant’s pies are so popular he didn’t want to talk about them so they don’t get too overwhelmed with orders, but he did anyway.

    “I almost don’t want to talk about them so they don’t get too popular but it’s dough that we make in-house. It’s got a little bit of honey in there,” he said. In keeping with the restaurant’s ethos the toppings consist of what’s in season at farmers’ markets so currently they’re creating pesto prosciutto pie with peach.

    The atmosphere

    The 7,800-square foot indoor/outdoor space is meant to blend in with the feel of the Gardens. And they really mean that since some of the elements of the restaurant grew up in the Gardens.

    “A couple of years ago we had some storms here at the Gardens and a few of our old oak trees fell down and so we had a local artisan named William Stranger take all that wood and build all the tables in the whole restaurant from these trees from the garden,” Cherney said.

    The bar is also made from the trees, but it doesn’t stop there, since curated plant installations by Descanso’s horticultural team are placed throughout the restaurant and will change seasonally.

    “It’s a really beautiful special place,” he said.
