How to Turn Canned Biscuits Into a Quick & Easy Summer Treat

If someone asked me to choose between cake, cupcakes, cookies, even brownies, I’d say “no thanks, give me pie.” Pie is my favorite. Flaky crust, juicy filling, a little sweetness—it’s everything I love in a dessert.

But I hate making pie. The whole process feels like a high-stakes baking challenge. The dough has to be chilled, rolled just right, transferred to a pan without tearing and sometimes blind baked. And that’s before you even think about the filling. So most of the time, I admire pies from afar or just buy a pre-made one at the store.

    That changed when I came across cookbook author and food creator Matthew Bounds (@yourbarefootneighbor) and the jaw-droppingly easy pie hack he found on the Pepper recipe app. He said it only takes five ingredients to make a killer pie-like treat. Naturally, I was skeptical, but intrigued. Here's what you need to know to try it in your kitchen.

    Start with canned biscuits and press each one out a little flatter so it’s wide enough to hold a bit of filling. Drop a spoonful of blueberry jam in the center, and top it with three fresh blueberries for a little juicy pop. Then fold the dough over, sealing the edges with your fingers so it resembles a hand pie.

    Once they're sealed, dunk each little pie in melted butter, place them on a baking sheet and bake at 375°F for 12 minutes. They puff up beautifully and turn golden on the outside while staying tender and jammy on the inside.

    Let them cool slightly, then dust them with powdered sugar. That’s it!

    They’re ready to eat and they’re so, so good.

    How to Customize This Recipe

    Matthew adds a little flair to his pies by using honey butter biscuits and brushing them with Texas Roadhouse Cinnamon Butter, which, honestly, is brilliant. The cinnamon sugar butter takes them to another level of cozy.

    But the base of this recipe is endlessly flexible. It’s just dough, jam and butter, so why stop at blueberries? Use cherry jam and some fresh halved cherries or peach preserves with fresh peach slices, and sprinkle the pies with cinnamon sugar before baking. Strawberry jam and chopped strawberries inside the dough give you a strawberry pie. After baking, serve with a dollop of whipped cream for strawberry shortcake vibes. Like apple pie (my favorite)? A spoonful of apple butter plus tiny diced apples sautéed with cinnamon would be great. Glaze with a powdered sugar icing instead of dusting.

    You can also swap the biscuits for crescent roll dough if you prefer a flakier texture, or use puff pastry if you want a fancier feel. The canned biscuits work so well, though, and keep the prep ridiculously easy.

    I love that I can finally enjoy the flavor of pie without the pressure of rolling dough or mastering crimped edges. This idea is quick, clever and absolutely delicious.
