Grilled cheese is one of my all-time favorite comfort foods. It’s quick, easy and a crowd-pleaser, plus you almost always have everything you need to make it—bread, cheese, and butter or mayo.
In less than five minutes, you get a warm, crispy, melty sandwich that satisfies everyone. It’s great paired with tomato soup and can be customized with your favorite ingredients or whatever you have on-hand. Layer on your favorite cheese, add some ham—or maybe some vegetables—to create your perfect grilled cheese.
And although I'd argue that grilled cheese is a pretty perfect recipe, there's always room for improvement, especially in the hands of a legendary chef like Thomas Keller. When I saw content creator Maxine Sharf (@maxiskitchen) making Keller's grilled cheese sandwich I knew it needed to go on my must-make list.

Keller recommends using Gruyère and cutting off the crusts of the bread, but you can do a mix of cheddar and Gruyère for a balance of sharp and nutty flavors, and keep the crusts if you want!
This sandwich is buttery, crispy and packed with melty cheese. The secret is starting it on the stovetop to get that perfect golden crust, then finishing it in the oven so the cheese melts completely. It’s restaurant-quality but is still simple, which is exactly the kind of recipe I love and am known for.
To make two sandwiches in just 15 minutes, you need four slices of brioche, Gruyère cheese, cheddar cheese and butter. You can get the exact amounts on Maxine's Instagram page.
Preheat the oven to 350° and assemble the sandwiches by evenly layering the Gruyère and cheddar between the brioche slices. Melt some butter in a large pan over medium heat. Once it starts to bubble, foam and brown (this takes about two minutes), add the sandwiches.
Cook the bread to golden perfection in the brown butter. Cook the first side for about one minute, checking every thirty seconds to make sure it’s not browning too quickly. Flip and cook the other side for another 30 seconds until deep golden brown.
Transfer the sandwiches to a baking sheet and spread some softened butter on top of each one. Bake for about five minutes until the cheese is fully melted. Once they're done, slice them and enjoy!

Why This Method Works So Well
I’ve made grilled cheese a million different ways, but this method is a total game-changer for my busy house. The quick pan sear gives the bread an incredible crunch, and baking it ensures the cheese melts fully without overcooking the outside. Plus, this means everyone gets a hot sandwich at the same time.
Also, using brioche takes it to another level. This bread is buttery, slightly sweet and toasts beautifully, making it perfect for a grilled cheese.
This recipe is great when you need a quick lunch, a cozy dinner with soup or even a fun and tasty snack. You can swap the cheeses to fit your mood, add some bacon or even season it with some Italian seasoning for a bit of extra flavor.
