Some bottles of bourbon are about more than what’s inside.
Heaven Hill Distillery’s latest release tells a story of loss, resilience, and rebuilding, with a rare connection to one of the most devastating moments in the company’s history.
On October 27, the Kentucky distillery announced Heaven Hill Phoenix, a limited-edition, 18-year-old Kentucky straight bourbon whiskey commemorating the 30th anniversary of a 1996 fire that destroyed its original Bardstown distillery and seven aging warehouses.
The fire, which occurred on November 7, 1996, destroyed nearly 100,000 barrels of aging bourbon and caused an estimated $30 million in losses to whiskey and facilities. Though the loss was devastating, the company persevered, and the new release celebrates the people who helped Heaven Hill rebuild.
“The fire brought tremendous loss, but it also showed the resolve of the people who chose to move forward together,” Max L. Shapira, Executive Chairman and second-generation family owner of Heaven Hill Distillery, said in a release shared with Parade. “That same spirit of adaptability and shared purpose continues to guide Heaven Hill today. Phoenix honors the employees, community members and industry partners who refused to let a single night define generations of craftmanship.”
The bourbon itself has a direct link to that history. Heaven Hill Phoenix combines 18-year-old Kentucky straight bourbon produced in March 2008 and aged in heavy-char barrels with 30-year-old whiskey distilled at the original Old Heaven Hill Springs Distillery before the fire.
Bottled at 107 proof, the limited-edition release features notes of polished oak, cinnamon, nutmeg and caramel on the nose. The palate brings butterscotch, cinnamon and baked apples, while the finish offers sweet apple pie and peppery spice, according to the distillery.
The packaging carries the story forward, too. Each 750-milliliter bottle comes in a special-edition gift carton featuring a phoenix rising from the ashes alongside the words “Remember. Rebuild. Rise.”
“Heaven Hill Phoenix balances the mature oak and length of its 30-year-old component with the structure of 18-year-old Bourbon aged in heavy-char oak,” Conor O’Driscoll, Master Distiller at Heaven Hill Distillery, said in the release. “The determination that carried us through the fire lives on in Phoenix, bridging that pivotal moment in our past with our ongoing commitment to producing exceptional, ultra-aged whiskeys.”
Heaven Hill Phoenix will begin shipping to select markets in October 2026, with a suggested retail price of $325 per bottle. It will also be available at the Heaven Hill Bourbon Experience in Bardstown, Kentucky.
