The recipe KESS recommends is his mom’s Great White Northern Bean Cajun Soup.
“This recipe brings me back to the good ol’ days when my mother would fill me up with this delicious soup,” KESS tells Parade.
“As an adult, I now appreciate the benefits it offers,” he adds. “The recipe is rich in iron, magnesium, potassium, fiber and protein, yet it is low in fat. The ingredients are available year-round, making it convenient to find, and you can always add your faves to the mix!”

Tips for Making Great White Northern Bean Cajun Soup

The cozy soup is ultra creamy, thanks to ingredients like great white northern beans, coconut milk and a secret ingredient KESS adds at the end: a cornstarch slurry, which KESS says creates “a nice gravy consistency.”
It’s also super flavorful, thanks to punchy spices like Cajun seasoning and allspice, as well as fresh ingredients like onion and garlic.
Additionally, this recipe is versatile and forgiving—feel free to add in whatever vegetables or greens you have on hand.
“Adjust recipe to your liking and you will enjoy a savory, smooth and filling soup to awaken your senses,” KESS says.

Why do I have to soak the beans?
Although the recipe for Great White Northern Bean Cajun Soup is pretty straightforward and simple, it’s not a recipe you can make without some preparation: it requires soaking dry great white northern beans in cold water overnight.
So if you think you’ll want to cook this soup tomorrow, then tonight is when you should seal the beans in a large container of water in the fridge. I know, I know—starting a recipe the night before feels like a massive effort. However, this step only takes a minute or two, and it’s always worth it!
Soaking beans overnight rehydrates them, helps them cook more evenly and helps them retain their shape better during cooking. Additionally, an overnight soak can actually make beans easier to digest, per Martha Stewart.
“Many people associate beans with digestive discomfort. Because our bodies don’t produce the enzyme needed to digest beans, they travel intact to the colon, where gut bacteria ferment them,” Sarela Herrada, co-founder and CEO at bean company SIMPLi, explained to Martha Stewart earlier this year. “This fermentation produces gases such as hydrogen and carbon dioxide, which in some people can lead to bloating or flatulence.”
But soaking the beans before cooking them can help you avoid this, as the soaking makes the beans easier on the digestive system, which means less gas and bloating.

How to Make Great White Northern Bean Cajun Soup

Here’s what you’ll need to make Great White Northern Bean Cajun Soup, per KESS:
3 garlic cloves, minced 2 small-to-medium onions, diced 3 Tbsp Cajun seasoning 3 Tbsp Tamari 1 Tbsp allspice seasoning 2 cups dry great white northern beans, soaked overnight 4 cups coconut milk 2 Tbsp cornstarch 1 cup water 1 Tbsp vegetable oil 1 Tbsp agaveRelated: I Made Dolly Parton’s Corn Pone Recipe—and Now I Finally Understand the Hype
And here’s how to make the soup:
Add vegetable oil, minced garlic, onions, Cajun seasoning, Tamari and agave to a medium-sized pot, and turn the heat to medium. Stir and mix well until garlic and onions are soft. Reduce heat. Add coconut milk and mix well. Add beans and let simmer for 2 hours. In a separate pan, mix water and cornstarch to create a slurry. Once the beans are cooked, slowly pour the slurry in the pot with the beans. Give everything a final mix and enjoy!Up Next:
