The brand has officially launched a gluten-free version of its iconic chocolate chip cookie, and according to Last Crumb, developing it took months. The goal wasn’t simply to make a gluten-free cookie. It was to make one that could live up to the O.G. name.

The original O.G. starts with caramelized butter dough loaded with three kinds of chocolate, including both chips and chunks, plus a touch of coffee and a sprinkle of Maldon sea salt.
According to the brand, developing a gluten-free version took months. Last Crumb says each of its cookie flavors gets its own from-scratch recipe, custom compound butter and dedicated baking temperature as part of a three-day process, and it took the same approach to recreating the O.G.

The new cookie uses Original Sunshine flour, a wheat-starch-based flour that meets FDA standards for gluten-free foods. Under FDA rules, wheat starch can be used in a food labeled gluten-free as long as it has been processed to remove gluten and the finished product meets the agency’s requirement of less than 20 parts per million of gluten.
Most importantly, Last Crumb says its bakers weren’t willing to settle for the dry, flat texture that can sometimes give gluten-free baked goods a bad name. The goal was to create a version worthy of sharing a name with the O.G.
How to Get Last Crumb’s Gluten-Free Cookies
The O.G. (Gluten-Free) is currently available through Last Crumb’s Build Your Own Box, which lets shoppers choose from the brand’s rotating lineup of cookies. The brand has also given its chocolate-heavy The Floor Is Lava cookie the gluten-free treatment.
As you might expect from a company that bills its cookies as luxury desserts, these aren’t exactly supermarket sandwich cookies. Last Crumb’s Build Your Own Boxes start at $90 for six cookies.
And for anyone in New York who would rather skip the shipping box, Last Crumb recently opened its first brick-and-mortar bakery in Williamsburg, Brooklyn, giving fans a chance to get their hands on the famously hard-to-score cookies in person.
