ROCHESTER, N.Y. — Maple Weekend, a series of two weekends to celebrate New York State’s maple syrup industry, kicks off on Saturday. Around 160 farms are taking part, including dozens in the Finger Lakes region, by organizing maple festivals, tasting events, and tours of production.
News10NBC went to Schoff’s Sugar Shack in Victor to see how they’re gearing up for Maple Weekend and how the recent up-and-down weather is impacting their production.
Chris Schoff says the farm makes between 200 and 300 gallons per year. He learned to tap maple syrup from growing up in the Tug Hill region and has turned it into a business for the past 23 years.
“A lot of people do this, mostly just to make their own syrup. I did it with my grandfather and my father growing up. It’s just one of those things that always stuck with me,” he said.

While some people may have loved the temperatures in the 60s and 70s earlier in March, it led to a standstill for maple syrup production. Schoff said producers have started to recover thanks to colder nighttime temperatures.
“You want it seasonable, and March has proven to be anything but seasonable. We went from 75 to 15 degrees. We want low 40s, mid 40s, with a freeze-thaw cycle at night during the day. Looks like we’re going to get that here the next couple of days and into the weekend, thankfully,” he said.
Maple syrup production has become much more efficient in the past 20 years, so farms can fit a lot of equipment into a small space. After collecting the sap, Schoff’s Sugar Shack uses reverse osmosis to remove some of the water, then uses an evaporator to remove even more water in the form of steam.
Schoff’s Sugar Shack on 1064 Willis Hill Road will be open from 10 a.m. to 4 p.m. on Maple Weekend and will hold tours. There will also be an express lane for people to pick up maple products. You can learn more here.
