World-Renowned Chef Accused of Abuse by Former Staff—What We Know So Far ...Saudi Arabia

News by : (Parade) -

While the front of house creates the illusion of order, the back of house often exists in a type of organized chaos that can create a pressure cooker that's almost always set to blow. It's not an environment for the faint of heart by any means. Never mind the fact that you're dealing with ultra-sharp knives, live fires and doing it all at breakneck speeds, but there's also a healthy dose of ego injected into any kitchen—let alone one as prestigious as Noma. It's this set of circumstances that allegedly led to the recent claims of abuse by former staff members at the world-renowned restaurant, and it's time we talked about it.

To catch you up to speed, René Redzepi, the highly acclaimed chef and co-founder of Noma, a three-Michelin-star restaurant often named the best in the world, has recently been accused of abuse by 56 former staff members who have come forward to detail their experiences. The disturbing allegations first started surfacing in February, when Jason Ignacio White, the former head of research and development at Noma's fermentation lab, began sharing victims' testimonies on Instagram.

Despite the recent bombshell allegations magnified by White on noma-abuse.com, the incredibly intense culture and extreme working conditions have been public for quite some time. The restaurant has routinely been discussed on message boards and social media and was even the subject of the 2008 documentary film Noma at the Boiling Point, which offered somewhat of a glimpse into what it takes for a concept like Noma to even exist. Redzepi himself has also acknowledged his behavior in the past, notably recalling in an essay for Lucky Peach an incident where he "went completely crazy" on an employee for not doing what he had asked of her.

Although the timeline of the alleged abuse is unclear, some of the testimonies claim that it goes back several years. One allegation states that a cook was punched in the stomach by Redzepi for not picking herbs correctly as far back as 2012. Unfortunately, the story is far from over. The news comes as Noma is set to embark on a 16-week pop-up in Los Angeles from March 11 through June 26. In lieu of the allegations, American Express and Blackbird have both backed out as sponsors. In a direct response to the claims made against him, René Redzepi posted a statement to Instagram, and it went over about as well as you'd expect.

As far as actually getting justice for the abused goes, that's still a work in progress, but Jason Ignacio White is wholly dedicated to using this moment not only to hold those at Noma accountable but also to effect change industry-wide. The unfortunate reality is that the environment at Noma doesn't exist in a vacuum, and there are likely other examples out there we haven't heard about yet. To stay up to date on what's happening with the victims, you can follow White on Instagram @microbes_vibes and keep an eye out on noma-abuse.com as the story develops.
