The Italian coastline is coming to downtown Los Angeles and it’s bringing a Tuscan menu not to the beach but poolside in a 100-year-old hotel.
Florence by the Water opened in mid-February overlooking an outdoor pool at Hotel Figueroa, which is marking its 100-year anniversary.
“The restaurant faces the pool so it’s really an oasis,” said Francesco Zimone, the restaurateur who opened the restaurant alongside Executive Chef Giuseppe Gentile.
“We really want to offer everyone who is in downtown Los Angeles in the middle of concrete a place where they can go and have a break. It’s an Italian restaurant with a Southern Italian Mediterranean influence,” Zimone said.

Highlights include Whipped Ricotta drizzled with harissa honey, the crisp Gnocco Fritto and 24-month prosciutto di Parma, as well as antipasti dishes like Gamberi topped with Calabrian chili herb oil and lemon. Some of the other must-try items include handmade pastas such as the Fettuccine al Tartufo with shaved black truffle, the Linguine Aglio e Olio with scampi tartare as well as seafood dishes like the whole Mediterranean branzino with Meyer lemon herb relish. It’s all authentic down to Earth Italian food, Zimone said.
“It’s very very simple but extremely effective,” he said.
In keeping with simple authenticity, Zimone also recommends the meatballs, which are made with Wagyu beef with no tomato sauce. He also highlights the Argentinian prawns which are imported weekly.
“Those are just fantastic. They’re done with extra virgin olive oil, lemon, green olives. So just extremely simple but incredible flavor,” he said.
Zimone has more projects coming to the century-old hotel. He’s planning on opening a Peruvian-Japanese restaurant across from the pool and a French restaurant in another main room of the hotel as well.
“We really like the idea of bringing more to downtown,” he said.
