Christopher and Ariana Teigland, the married duo behind Denver’s Glo Noodle House, are bringing culinary inspiration to Boulder this spring with a new sushi eatery, Odd Rabbit, a “traditionally non-traditional” sushi restaurant set to open at 5845 Arapahoe Ave., just a few blocks from where the couple first met while working at Josea Rosenberg’s Blackbelly Market & Restaurant.

Known for Michelin Bib Gourmand-recognized ramen and creative Japanese-inspired cooking at Glo, the Teiglands announced on Tuesday that they’ll craft a sushi-focused menu for the new 3,500-square-foot space in Boulder, which will seat 90 inside, as well as a 10-seat chef’s counter and a 40-person patio space, a release states.

The menu will center on sushi, with nigiri selections such as hamachi, uni and spicy tuna, alongside handrolls and specialty dishes like salmon sashimi and tuna tataki. Chef Stephen Nguyen, known for his work at Denver’s Temaki Den and for launching sushi service at Uncle, a ramen shop in Denver’s Highland neighborhood, will oversee the raw fish component.

Beyond sushi, Odd Rabbit will fold in a selection of dishes that nod to Glo’s following, including tori paitan ramen and duck mazemen, along with plates like miso mussels, Szechuan fried snapper, braised pork shoulder and Wagyu steak.

“Food has always been how I make sense of the world,” Christopher Teigland said in a release. He grew up in Chicago and later worked at acclaimed Chicago restaurants like Alinea, EL Ideas and Boulder’s Blackbelly. “With Odd Rabbit, I wanted to slow things down and really focus on the beauty of simplicity. Great fish, well-seasoned rice, clean cuts.”

Ariana Teigland went to culinary school, which led her through various kitchens of Denver before a James Beard Scholarship for Women in Culinary Leadership took her to Chicago, where she sharpened her skills in service and beverage programming. The couple opened Glo Noodle House in Denver in 2022, followed by a Vail outpost inside the mountain town’s Avanti Food Hall in 2025.

But Boulder, the Denver restaurateurs said, felt like a serendipitous place to launch their next concept.

“We have had opportunities to expand in Denver, but nothing ever felt quite right,” Ariana Teigland said in a release. “This opportunity actually came from one of our regular guests at Glo. He asked if we’d ever considered Boulder, and the moment we saw his space, we could feel the potential. Bringing our story back to the city where we met feels incredibly natural.”
