When I’m president, I’ll sign an executive order declaring every town in America must have a great bakery with great coffee.

The fact is this: Bakeries are plentiful, but the good ones are an exception. And a truly great, first-class bakery is rarer.

And so my message for the good people of La Grange: lucky, lucky you.

You’re lucky to have The Bellbird Bakeshop, from the wife-and-husband team of Maree and Erik Hecimovich. They’ve spent their careers in the baking and pastry world, but always working for someone else: Nobu, Momotaro, Publican Quality Bread, and the now-closed, three Michelin-starred Grace.

With a young family in tow, the Hecimovich’s took the leap into the entrepreneurial transom: They took over a space in downtown La Grange in late 2024 and opened The Bellbird Bakeshop, located at 15 West Harris Avenue.

I’d hate to imply only chic downtown neighborhoods with rows of luxury condos could be home to a bakery of this caliber, but The Bellbird Bakeshop makes you yearn to live within walking distance.

Open 8 a.m. to 3 p.m. Wednesday through Sunday, The Bellbird Bakeshop offers 20 pastries and several kinds of bread. You can check out what is offered daily on their website here.

Here are three things I’d get if you visit:

Scones: The Hecimovich’s are quite proud of scoring a first-place win at a recent scone competition in La Grange. I can understand how. These are buttery and crumbly, with a tenderness on par with a Paul Anka ballad.

Pan Suisse: Erik’s mother is of Mexican heritage, and it’s reflected in this stunner of a pastry. Bellbird’s buckwheat croissant is the basis here — baked flaky and crisp, enveloping a Mexican mole brownie on the inside! You know how the cheese in a ham-and-cheese croissant oozes out during the bake and turns caramelized and crisp? Same thing happens with the cajeta cream, which forms into a crispy milk chip. It’s worth driving 30 miles just to try this.

Almond Croissant: 10 out of 10, no notes.
