This time, she’s turned her attention to the ploughman's lunch, a dish that’s been quietly perfect for centuries: a plate of good cheese, crusty bread and tangy pickles, all meant to be eaten slowly and joyfully.Cook Bales, who is a British literature teacher, knows that busy people often need a lunch that's pretty much assembly only. As a former teacher, I felt that deeply. There are days when you’ve spent hours managing a classroom, answering emails or staring at a screen and what you really want is a smorgasbord of your favorite things: something easy to throw together and satisfying enough to get you through the afternoon. Bonus points if every bite is delicious!Cook Bales nailed that feeling perfectly—her ploughman’s lunch isn’t about perfection or strict rules; it’s about building a little grazing board that feels comforting, nourishing and just a bit indulgent, even if you’re eating it between Zoom calls. Here's what you need to know about this tasty trend, plus some tips from Cook Bales for first-time ploughman's lunchers.Related:This Aldi Cheese Is Suddenly the Star of a New Viral Sweet Potato Trend?? "When it comes to food, I grocery shop for ingredients that look good, and my lunches usually come together based on what’s in my fridge and what needs to be used before it goes bad. Some of my favorite combinations have come from those 'use it up' moments," she shares.Related: I Tried the Viral British Cheese Sandwich and Found My New Favorite Weekday Lunch

There’s no real cooking involved, which is part of the appeal. When I made mine, I kept in mind that we eat with our eyes first. So instead of cutting up all the elements and throwing them on a plate, I made sure to carefully arrange my ingredients.

I absolutely loved this little board. It felt like the British version of "girl dinner" or an upgraded cheese board that actually counts as a meal instead of something rushed and discombulated, like half an apple with a side of shredded cheese straight from the bag.
From there, I added some jewel-toned beet chunks, bright pink and purple radishes, French ham, cheddar, a punchy yellow mustard, a crusty baguette and an apple. Honestly, the hardest part of making this was deciding where to place everything on my board so it was aesthetically pleasing.
