How To Make Wishbone Kitchen's French-Style Hot Chocolate

To prepare this hot chocolate, start by warming the milk in a small saucepan over medium heat until it’s simmering. Then, turn off the heat and add the dark chocolate, brown sugar and sea salt and stir well.

If the chocolate isn’t completely melted, warm the mixture on low heat until the mixture is smooth.

For the marshmallow meringue, pull out your stand mixer or grab an immersion blender and add the whisk attachment. (I've used both successfully, so just use what you have.)

Add the egg whites, salt and cream of tartar to the bowl, whipping until the mixture is foamy. Set the egg white mixture aside while you make the sugar syrup for the meringue.

In a medium saucepan, bring some sugar and water to a gentle boil, stirring the mixture constantly so it doesn’t burn. Right before the sugar syrup is ready, beat the egg whites on high speed.

Slowly add the simple syrup to the egg mixture, making sure to stream it in along the side of the bowl so you don't cook the eggs. Pull out your favorite wintery mug, add the warmed hot cocoa and a generous dollop of the marshmallow meringue. Use a handheld chef’s torch to toast the meringue for a real toasted-marshmallow-hot-cocoa experience. (Although the torching step is optional, I’d say it’s quite essential.)
