Because Doughy is safe to eat raw, the first thing I did was sample the uncooked dough. It was delicious, smooth and fun to eat. Next, I baked up a few cookies, which emerged from the oven with golden, crispy edges and what seemed to be nice, chewy-looking centers.

From there, though, things went downhill. In lieu of flour, Doughy uses a cashew base, which tasted heavy in the baked cookies rather than rich and balanced. The cookies also crossed into candylike stickiness and actually got stuck in my teeth, which made the whole experience less than enjoyable.

Edible in both raw and baked form, the dough tasted really great right out of the package. And once baked, the cookies' texture was terrific: ultra-thin and lacy with a delightful crispiness. The chocolate chips did feel a little skimpy, however, and the cookie lacked a certain richness. (Earth Balance margarine stands in for butter here.) These Eat Pastry cookies aren't bad—especially for a vegan option—but they didn't quite do it for me either.

The texture was thick and noticeably sandy, with that telltale gluten-free graininess throughout. (Rice flour and natural starches replace traditional flour in this dough formulation.) It’s nice to have as an option for shoppers who need it, but for anyone chasing a truly classic chocolate chip cookie experience, this one falls short.

Flavor-wise, though, this cookie was more “interesting” than classic. Those ingredients give the cookies a straightforward, familiar taste without overly processed notes, though the soft texture made them feel less substantial and special than brands that ranked higher on my list.

Granted, the gluten-free flour (made from oat, tapioca and potato starch) was a bit grainy for my taste, and its flavor steered the cookie's overall profile away from resembling the "real thing." But taken on its own terms, the flavor is solid and pleasant, with mild vanilla notes, gentle sweetness and a straightforward chocolate flavor that doesn’t overpower the dough.
