YOU NEED:

350g macaroni 1 onion 1 garlic clove ½ tbsp olive oil 240g baby spinach 250g frozen peas 30g fresh parsley 125g lighter mature cheese 100g reduced-fat soft cheese ½ 125g ball mozzarella di bufala 4 pitted black olives

METHOD:

Cook the macaroni according to pack instructions. Drain, reserving amug of the cooking water, and return to the pan.

While the pasta cooks, finely chop the onion and crush the garlic.

Heat the oil over a medium heat in a non-stick frying panand cook the onion for five to six minutes, until soft but notcoloured.

Stir in the garlic and cook for another minute. Add the spinach and peas, along with a splash of pasta water, and cover with a lid.

Turn down the heat and cook for five minutes, until the spinach has wilted.

Transfer the spinach mix to a blender, along with the parsley (leaves and stalks), and whizz until smooth.

Grate the lighter mature cheese. Add this and the reduced-fat softcheese to the green sauce, along with a splash of pasta water, andwhizz again until combined.

Stir the sauce into the pasta. Transfer to a serving dish (about22cm/8.5in diameter).

Now make the “eyes” by rolling the mozzarella into ballsand topping with pieces of black olives.

Dot these all over the pasta to serve.

Choc-orange Cobweb Cupcakes

There’s fright with every bite of these creepy cobweb cupcakes – and they’re lots of fun to make with kids, too. (Makes ten)

Preparation: 20 minutes Cooking time: 25 minutes Price per portion: 49p

YOU NEED:

250g light brown sugar 3 medium eggs 125 ml vegetable oil Zest of 1 orange 1 tsp vanilla extract 225g plain flour 1½ tsp baking powder 1 tsp ground cinnamon 250g butternut squash For the frosting: 125g dark chocolate 200g butter 400g icing sugar 2 tbsp semi-skimmed milk 100g white marshmallows

METHOD:

Preheat the oven to 180C/fan 160C/gas mark 4 and linea muffin tin with ten deep muffin cases.

Whisk together the brown sugar, eggs, vegetable oil, orangezest and vanilla extract.

In a separate bowl, combine the flour, baking powder andcinnamon.

Transfer the flour, baking powder and cinnamon into the egg mix and and whisk until smooth.

Grate the butternut squash and fold through with the other ingredients.

Spoon into the cases and bake for 20-25 minutes, or until goldenand risen and a skewer inserted into the cakes comes out clean.

Leave to cool for five minutes in the tin then transfer to a wire rackto cool completely.

For the frosting, put the chocolate in a microwave-safebowl and heat in 30-seconds bursts until melted.

Set aside to cool completely.

Soften the butter and put in a large bowl. Whisk until soft.Add half the icing sugar and whisk until smooth, then add theremaining icing sugar and whisk until fully incorporated.

Whisk in the cooled melted chocolate, then add enoughmilk to get a smooth piping consistency.

Transfer the icing to a piping bag fitted with a star nozzle andpipe a swirl of creamy icing on top of each cupcake.

For the cobweb decoration, heat the marshmallows in a bowl in themicrowave for 30-second bursts, until melted.

Leave until cool enough to handle, then take a teaspoonful ofthe mixture between your fingers and stretch it until it looks like acobweb.

Lay it on top of the frosting. Repeat until all the cupcakes are covered in delicious sticky webs.

Colourful Witches’ Fingers

These eerie finger food works out at 69p per person

This eerie “finger” food will really get your spook on at a party. (Makes 18)

Preparation: 30 minutesCooking time: 25 minutes Price per person: 69p

YOU NEED:

375g ready-rolled shortcrust pastry, cut into 3 rectangles, then cut each rectangle into 6 smaller rectangles. 200g tomato salsa 18 almonds, blanched 1 egg 10g hard cheese, finely grated 1 tsp green food colouring gel 150g guacamole

METHOD:

Preheat the oven to 190C/170C fan/ gas mark 5.

Roll each pastry piece between your hands to make them into a finger shape (approximately 10-12cm long).

Use a knife to gently score lines across the middle for knuckles.

Press the tops of the fingers with your thumb to make an indentation for the nail.

Brush each with a little tomato salsa, then press onan almond nail.

Transfer to a non-stick baking sheet. Brush the fingers with egg and scatter over the cheese.

Brush the nails with a little green colouring. Bake for 20-25 minutesuntil cooked through (check after 15 minutes and cover with foil if browning too much).

Allow to cool. Brush the nails again with food colouring. Dip the bases in guacamole and salsa just before serving with the remaining guacamole and salsa.

Scary Skull Sangria

Hosts can try out these spooky skull sangria

Spook out your Halloween guests with this chilling cocktail, complete with bobbing apple “skulls”. (Serves eight)

Preparation: 15 minutes Cooking time: 1 hour 30 minutes Price per portion: 98p

YOU NEED:

3 mini apples 2 lemons 750ml Spanish red wine (or cranberry juice) 1 lime, juice only 1 orange, juice only (and some extra slices to serve) 100ml ginger cordial 200ml sparkling water 100g pomegranate seeds

METHOD:

Preheat the oven to 120C/fan 100C/gas mark ½. Peel the apples, cut in half through the stem and remove the core.

Using a sharp knife, carve a face on the rounded side of each apple and use a melon baller or small spoon to carve out the eyes.

Juice the lemons and put half the juice in a bowl with the apples and top up with water to cover.

Set aside for ten minutes – this will help prevent the apples from browning too much in the oven.

Line a baking tray, dry off the apples and add them tothe tray.

Bake for 1½ hours, until they start to dry aroundthe edges.

Set aside and leave to cool.

In a large bowl or jug, combine the red wine (ideally rioja), remaining lemon juice, the juice of one lime, juice of one orange and ginger cordial.

Stir in the sparkling water, pomegranate seeds and plenty of ice.

Garnish with some orange slices and the apples, face side up.

For an alcohol free version, replace the red wine with cranberry juice.

CARVE A PUMPKIN LIKE A PRO

The first thing to do is choose the right pumpkin.

Look for one without soft spots, though a few lumps and bumpscan add extra character.

After washing it, cut around the stem, angling it to cut in a way so that the lid won’t fall in later.

Use a spoon or ice cream scoop to remove all the seeds, stringy bitsand pulp.

Keep scraping at the sides to make the walls of the pumpkin thin enough to carve.

Ideally you want them to be no more than an inch thick. Grab a marker pen and draw a spooky design on the outside.

To help with a gruesome design, you can print out templates found online.

Tape the print-out to the pumpkin and use a skewer to poke holes along the design.

Use a sharp knife or pumpkin carving kit to cut your design out, pushing cut pieces out from the inside.

Add a candle or LED light inside, making sure there is a gap in the lid for ventilation.

TIP: Don’t carve your pumpkin too early or it may rot before Halloween, giving you the biggest fright of all!

It’s best to leave it to less than three days before fright night.

GAMES TO GET PARTY THE STARTED

You’ve made your tasty snacks, now bring on the spooky vibes with these fun Halloween party games.

DANGER DOUGHNUTS:

Hang Halloween doughnuts or those with red “blood” icing from string and get players to eat them without using their hands.

If some blood-red filling starts dripping down their chin, all the spookier.

GUNK DUNK:

Put a few of Lidl’s Wednesday Sour Bones, £1.49 or99p with Lidl Plus, on plates and pile whipped cream or angeldelight on top.

The players must find and pull out the bones from their ownplate using only their mouth, and the fastest to finish wins.

You could use Lidl’s Halloween Mallows, £2.49 or £1.99 with LidlPlus, instead.

CHOC SHOCK:

Players take turns rolling a dice.

When they get a six, they put on a pair of skeleton gloves (£4.49,smiffys.com) or some scary fancy dress claws, and grab a knife and fork.

They then try to eat a chocolate bar, square by square, with the cutlery.

As they are tucking in, the other players carry on rolling the dice to get a turn.

The winner is the one who scoffs the last bite of chocolate.

RACING SPIDERS:

Give everyone a plain cupcake or cookie, plus a tube of black icing, liquorice or black laces for legs and candy eyes.

Each person then makes a spider cupcake. Set a timer for two minutes and see whose design is best.
