Hearty, healthy guacamole and steak dip

Ingredients: Whole Foods, Costco, or garden avocados, tomatoes, yellow onion, Cholula, steak, olive oil, and chips.

Tools needed: Cooking pan, bowl, cutting board, sharp knife, fork, spatula, mixing bowl, serving bowl.

Prep and serve: For two people, chop ¼ yellow onion fine and sauté in pan with liberal dashes of olive oil on high heat until clear and slightly browned if desired, let cool, meanwhile mash 1 and 1/2 avocados with 1/2 cup chopped tomatoes, 6 dashes of Cholula, 3 tablespoons yogurt. Add sauteed onion and 4 to 6 ounces of cooked filet mignon into small pieces (I like using leftovers), stir it all and place one avocado seed in middle to prevent browning, decorate with additional tomatoes and ½ avocado slices, add chips around edge. Enjoy!

Ingredients: Whole Foods or Costco pitted dates, baking soda, butter, organic unsweetened coconut flakes, monk fruit, eggs, flour, vanilla extract, walnuts and chocolate chips.

Tools needed: Large Pyrex mixing bowl, spoon, teaspoon, chopping board, sharp knife, measuring cup, 9 by 12 or equivalent pan.

Prep and serve: Chop fine 1 cup of dates, heat 1 cup water in Pyrex bowl to a boil, stir in chopped dates, let cool, then add 1 teaspoon baking powder, 1/3 cup soft butter, 1/2 cup coconut flakes and 1/4 cup monk fruit. Whisk in 2 eggs, stir in 1 and 1/2 cups flour, add 1 cup chocolate chips and 1 teaspoon vanilla. Top with 1/2 cup chopped walnuts and bake in pan at 325 degrees for 15 minutes. Add 3/4 cup chocolate chips to top, bake another 5 to 10 minutes. Do clean knife test to know when done. Enjoy!
