How to Make Date Eggs
The dish is simple. To make Sadeghin's version, start by sautéing some pitted dates in butter. This first step really brings out the rich, caramel note in the dates, which is the key to this dish. When gently warmed in butter, the dates plump up and soften, infusing the eggs with a hint of natural sweetness and deep flavor. Next, pour whisked eggs on top of the dates. Scramble the eggs and dates together and as the eggs begin to firm up, add in chunks of cream cheese, stirring gently until the cream cheese melts and the eggs are creamy and cooked through. Stir in some grated cheese once the eggs are nearly done, then season with salt and pepper to taste.
Sadeghin offers a few tips for making this dish like a pro.
She also shares that this isn't a dish you should rush. “Low and slow is always key when cooking scrambled eggs in my opinion, and for this dish, it's vital," she explains. "The creaminess of the soft scramble with the plump pieces of date is what makes it so magical.”
