Start by seasoning the chicken thighs with salt and pepper. Heat the olive oil over medium heat in a large, oven-safe skillet. Sear the chicken on both sides, then remove and set aside. In the same skillet, melt the butter and add the onions and thyme. Cover and cook over medium-low heat, stirring occasionally, until the onions become soft, deep golden and caramelized.
Nestle the chicken back into the skillet, spooning some of the onion mixture on top. Sprinkle with the Gruyère, then transfer the skillet to the oven and bake until the chicken is cooked through and the cheese is bubbly and golden.
