Sometimes a disappointing lunch ruins your day, other times it becomes a revolutionary grocery store product.
The latter was the case for Mabel White Holmes, a Michigan mom whose idea for making better biscuits helped launch one of America’s best-known baking mix brands.
In 1930, her family’s business introduced the first prepared baking mix sold to the public and the inspiration came from a young visitor whose homemade lunch left something to be desired.
Holmes was married to Howard Samuel Holmes, whose family owned Chelsea Milling Company, a flour mill in Chelsea, Michigan, and the couple had twin sons, Howard and Dudley, who one day invited a friend over for lunch.
“She had a few of her son’s friends over and peered into one of their lunches that one of the boys brought over and saw what she is said to have described as a ‘white hockey puck of a biscuit,'” Jiffy President and CEO Howard S. Holmes II told Scripps News in June 2026. “And that was the lightbulb moment. She said, ‘Look, we run this flour mill. What if we made a product that was so easy, anybody could do it?’ And, so, that was the birth of Jiffy Mix.”
The rest, as they say, is history. Jiffy was launched in April 1930, in the midst of the Great Depression, when affordable and convenient food options could help families stretch their budgets. Holmes and her husband kept the product affordable as they introduced it to the public, even making sure the packages included just enough food for one meal to cut down on waste. The catchy name that has become synonymous with delicious and easy baking came from Holmes’ childhood, when her family cook would announce that hot biscuits would be ready in a “jiffy,” according to Michigan Women Forward.
Today, Chelsea Milling Company remains family-owned, and Jiffy continues to sell baking mixes nearly a century after Holmes first came up with the idea.
“Ninety years after our debut in 1930, our mission remains the same. At ‘JIFFY’ our mission is to provide our consumers with the best possible value. We define Value as being the highest quality ingredients and the best price,” the company states.
