Pumpkin spice may get most of the attention this time of year, but it doesn’t have a monopoly on fall flavors. As temperatures drop and sweaters come out of hiding, notes of caramel, chocolate, baking spice and dark-roast coffee all sound pretty inviting, especially when they come in a single glass of whiskey.Hard Truth Distilling Co. is leaning into those flavors with its new Master Distiller’s Reserve Dark Roast Rye, a limited-edition whiskey that seems particularly well-suited for cooler nights. The Indiana-made rye opens with notes of buttered toffee, café mocha and clove, followed by butterscotch, chocolate, vanilla custard and rye spice. As it finishes, toasted marshmallow, brûléed sugar and dark-roast coffee join fruit, spice and oak.

It’s the kind of flavor profile that reads like fall in a glass, but Dark Roast Rye isn’t a flavored whiskey, and there’s no coffee or chocolate added to create those notes. Instead, they’re the result of an unusual choice of grains—and an experiment Hard Truth has been working on for years.
To understand what makes this particular bottle different, however, it helps to start with what makes a rye a rye.
What Is Rye Whiskey?
All whiskey starts with grain, and which grains go into the mash can make a big difference in the taste of what’s in your glass.
In the United States, rye whiskey must be made from a mash bill containing at least 51 percent rye grain. Bourbon, on the other hand, must contain at least 51 percent corn. While charred barrels, aging and plenty of other factors influence the final flavor profile of whiskey, those different grains help give the two styles very distinctive personalities.
Bourbon often leans toward sweeter flavors such as caramel and vanilla, while rye is generally known for being drier, spicier and a little more assertive.
Hard Truth’s Dark Roast Rye lands right at that 51 percent rye threshold. Another 38 percent of its mash bill is corn. That leaves 11 percent left—and that’s where this whiskey gets particularly interesting.

The Secret Is in the Grain
Dark Roast Rye is actually a 50/50 blend of two Hard Truth rye whiskeys. Both begin with that same combination of 51 percent rye and 38 percent corn, but Hard Truth does something different with the remaining 11 percent.
One whiskey uses chocolate malted barley, while the other uses caramel malted barley.
Despite their names, that doesn’t mean someone is tossing chocolate bars or caramel into the mash. These are specialty malts that have been roasted to develop deeper flavor and color in the grain itself. It’s a technique more commonly associated with beer brewing, where specialty malts can contribute notes reminiscent of cocoa, coffee, caramel and toast to beers such as porters and stouts.
Hard Truth began experimenting with roasted malts in rye whiskey back in 2018. By bringing those grains into whiskey production, the distillery found another way to layer richer, roasted flavors onto rye’s characteristic spice.
For Dark Roast Rye, those two specialty-malt whiskeys are blended together in equal parts. The result is still very much a rye whiskey, but one with darker, sweeter notes woven through its flavor profile and lingering into the finish.
A Rye That Pairs With Fall

Hard Truth offers buttered toffee, café mocha and clove on the nose. On the palate, those flavors move toward butterscotch, chocolate and vanilla custard alongside rye spice. Brownie, brûléed sugar and dark-roast coffee emerge through the finish before giving way to fruit, pepper and oak.
Those dark-roast notes aren’t meant to suggest that sipping the whiskey is like drinking a cup of coffee. They’re subtle flavor notes that develop and linger after each sip.
And it isn’t only Hard Truth finding those characteristics in the glass. Drinkhacker’s review of Dark Roast Rye similarly found cold brew and cocoa on the nose, followed by toffee, chocolate and hazelnut, with espresso, semisweet chocolate, nutmeg and butterscotch carrying into the finish.
There’s some history behind those flavors too. Whiskey drinkers have previously noted chocolate, toffee, espresso and dark-roast characteristics in Hard Truth’s specialty-malt rye releases, suggesting this bottle isn’t simply an attempt to slap a seasonal flavor onto a whiskey. It’s the latest iteration of an idea the distillery has been exploring for years.
Taken together, the butterscotch, chocolate, clove, vanilla, brûléed sugar and roasted notes make a pretty convincing argument for pouring this one when there’s a chill in the air.
Where To Find Hard Truth Dark Roast Rye
Hard Truth Master Distiller’s Reserve Dark Roast Rye is a limited 25-barrel release with a suggested retail price of $59.99. After making its official debut at Hard Truth’s Harvest Festival in Nashville, Indiana, on Sept. 26, the whiskey began rolling out to retailers across the country.
The easiest way to hunt down a bottle near you is through Hard Truth’s online Spirits Finder, which lets you search for retailers carrying its products in your area. Since the finder is based on recent shipments and doesn’t guarantee a bottle is still on the shelf, Hard Truth recommends calling the store to confirm availability before heading out.
It’s also bottled-in-bond, a designation with specific requirements under U.S. law. Among them, the whiskey must come from a single distilling season and single distiller, be aged for at least four years in a federally bonded warehouse and be bottled at exactly 100 proof.
That 100-proof backbone should be enough to remind you that, for all the buttered toffee, chocolate and lingering dark-roast notes, this is still a serious rye whiskey.
And for anyone who likes their fall flavors with a little more spice and a lot less pumpkin, that sounds like a pretty good way to welcome the season.
