SYRACUSE, N.Y. — The New York State Fair wrapped up on Labor Day, marking an end to 13 days of live music, exhibits, food, and rides in Syracuse. So, what’s happening with the fair’s annual butter sculpture?

Noblehurst Farms in Livingston County broke down the sculpture on Tuesday to turn the 800 pounds of butter into fuel to power the farm and homes. The sculpture took 11 days to build, but the demolition took only 70 minutes.

This marks the 11th straight year that the fair has recycled its butter sculpture for fuel, according to the American Dairy Association North East. The 58th annual sculpture paid tribute to the Empire State’s influence on American traditions, in honor of America’s 250th anniversary.

This year’s fair ran from Aug. 26 through Sept. 7. More than 960,000 guests visited the fairgrounds, up from 36,000 in 2025.
