I confess, I love Valentine’s Day — it’s a great time to do something special for the one you love. And you can do so on a budget with the right sources. Yay, wholesalers Costco and Chula Seafood in Point Loma! Romance on a budget, there we go! 

Caviar Decadence

20 minutes 

Ingredients: Birch Pancake mix, eggs, caviar, red onion, crème fraiche, hard-boiled eggs.

Tools needed: 1 saucepan, spatula, cooking spoon, mixing bowl, cutting board, sharp knife, small spoon, plate.  

Prep and serve: make Birch pancakes for 2 first and let cool, I add 2 eggs and enough oat milk to make it batter consistency, to make 5 inch round pancakes, set pancakes aside let cool, chop fine 2 T red onions, peel off whites from 2 hardboiled egg yolks and quarter yolks, for each person, take one pancake and place 1-2 T of crème fraiche, sprinkle 1/2 T red onion minced, add quarters of 1 hardboiled egg yolk, with small spoon top with 25-50 grams of Malossol caviar or comparable.

Lobster with Sherry Beurre Blanc Sauce

20 minutes  

Ingredients: Chula Seafood lobster tails, they are big and tender, 14 to 16 ounces (Chula saves you money, fresh wholesale to the public), Sherry, unsalted butter, parsley, cooked shrimp, organic mayonnaise, cherry tomatoes. 

Tools needed: Large saucepan with lid, tongs, sharp knife, cutting board, saucepan, knife, small bowl, plate, colander, and kitchen scissors. 

Prep and serve: Bring to a simmer ¾ inch water in a large pan with a lid, cook 2 lobster for 12 minutes (less if smaller lobster tails) at low simmer with lid on until meat is just opaque, while lobster is cooking, melt ½ cup butter in small sauce pan, when melted clarify using a knife blade, keeping fat out, pouring clarified butter into small bowl, pour clarified butter back in saucepan and add ¼ cup Sherry until low simmer and remove, take cooked lobster and cool lobster tails in colander with cold water poured over to prevent over cooking, cut lobster underside of shell, fan out on plate with underside up, pour liberally Sherry beurre blanc sauce over, with some on plate, take 2 cooked shrimp without tails, make a heart, put mayonnaise in center, cut and place tomato halves around heart, decorate lobster with parsley.
