The Starlight Double-Delight Cake has quite a legacy. It won the third annual Pillsbury Bake-Off contest in 1951, earning its creator, Helen Weston of La Jolla, California, a $25,000 cash prize, a new General Electric kitchen and a permanent place in the American baking canon. The fun twist is that the recipe incorporates cream cheese frosting right into the batter—an innovation that made national headlines back in the day. "Even a kitchen novice will recognize that such a method represents something entirely new in home baking," raved the New York Times.

Next, it's time to assemble and frost the cake. Place one cake layer, top side down, on a serving plate. Spread with about a fourth of the frosting. Top with the second cake layer, top side up (the rounded side). Spread the sides and top of the cake with the remaining frosting. Stick the cake in the fridge to firm up the frosting and let the mint flavor settle a bit.

My Honest Thoughts About the Starlight Double-Delight Cake
Courtesy Jessica Wrubel
Despite the cake's somewhat basic qualities, the peppermint hit a nice nostalgic note for me. This cake tastes exactly like the Andes chocolate mints my grandmother used to set out in a little glass dish, and that alone was nearly enough to win me over. I also love how my kitchen filled with a dreamy chocolate-peppermint aroma as I mixed the ingredients. It smelled like Christmas morning.
Other than the frosting-in-the-batter twist, this is a straightforward, old-fashioned cake. (The only real curveball came when I accidentally splattered melted chocolate everywhere while mixing the frosting by hand, but that's on me, not the recipe.)

While refrigerating baked goods can sometimes get the evil eye, you'll want to stick this cake in the fridge as directed in order to keep the cream cheese-based frosting stable. Plus, I found that the flavor improved after the cake chilled for a bit.
