Lucky me: When I was growing up, a neighbor of mine was an incredible cook. She taught me how to bake her famous train cake that can be changed in a multitude of ways to fit the occasion. Great for children and adults to decorate together.

Naughty ‘n’ nice hot chocolate!
20 minutes
Ingredients: Almond milk or milk, monk fruit, unsweetened cocoa powder, cinnamon, cinnamon stick, nutmeg, Kahlua, mini marshmallows.
Tools needed: 1 saucepan, measuring cup, tablespoon, cooking spoon, serving cups, shot glass.
Prep and serve: Stir in a saucepan 2 cups milk, 2 T monk fruit, 2 T cocoa powder, a pinch of cinnamon, heat to simmer, serve in cups, for adults have 1 shot Kahlua in cups, for all top with mini marshmallows and cinnamon stir stick. Enjoy!

Ingredients: Pavilions – pound cake (yes, I cheated), peppermints, red licorice, M&M’s, gum drops, Hershey kisses, cream cheese, monkfruit or sugar.
Tools needed: Platter, knife, glass of water, bowl, fork, scissors.
Prep and serve: Per train car, in a bowl soften 8 ounces cream cheese and mix in 1T monkfruit or sugar, cut licorice and lay train tracks on platter, cut cake for different train cars, use knife and spread on cream cheese frosting dipping knife in water to put frosting on smoothly, decorate as you like with candies but you can follow my photo ideas. Refrigerate until served. Choo choo… and enjoy!
