1. Go big
First, divide the dough into half-cup portions. Yes, it’s a lot of dough, but fancy, bakery-style cookies are big and have a signature thick texture, which starts with a generous amount of dough per cookie.

Once the dimples are made, line a light-colored baking sheet with parchment paper, and place it on top of another baking sheet. The double layer prevents the bottoms of the cookies from over browning while the tops stay soft and chewy.
5. Crank up the heat
While the dough chills, set your oven to 400° instead of 350°. “Take the precut dough and measure out half a cup. It will take at least three or four regular-sized pre-cut cookies," she explains. "Just press the dough balls into your measuring cup, then continue with the steps.”

How This Cookie Hack Worked in My Kitchen
I tried Peterson's hacks myself and got four huge cookies from a single roll of dough, though I could’ve made six slightly smaller ones. I also tested it with pre-cut gluten-free cookie dough (it took four cookies to make a half cup of dough), which needed a few extra minutes and its own pan to finish cooking properly, but the results were still worth it.
